Lemon Shrimp Chickpea Spaghetti

Lemon Shrimp Chickpea Spaghetti

Ingredients: (Makes 4 servings)

8oz chickpea spaghetti

1 pound raw shelled, deveined shrimp

2 lemons (zest and juice)

½ cup olive oil

½ cup grated Parmesan cheese

¼ cup fresh basil, chopped

¼ tsp salt

¼ tsp ground black pepper


Preparing this recipe:

In a pot filled with water and a pinch of salt, cook chickpea spaghetti according to the directions (7 – 9 minutes) on your package, then strain and rinse with warm water and return to the pot. On a skillet on medium high heat, add a pinch of salt and pepper to the shrimp and cook 2-3 minutes, flip the shrimp add salt and pepper to taste and cook for 2-3 additional minutes. Remove from heat.


In a small bowl, whisk together the olive oil, lemon zest and lemon juice from both lemons, Parmesan cheese, salt, pepper, and chopped basil. Whisk until thoroughly combined. Combine the spaghetti and lemon oil mixture and heat on medium, stirring until simmering then add shrimp to combine. Finish with a pinch of Parmesan or basil (optional).
