This salad is our new go-to for a hearty lunch, a lighter dinner, or any lunch gathering with friends! Packed with arugula, radicchio, pears, chicken and other fun pops of flavor (almonds, Parmesan, croutons anyone?), this salad is both beautiful and deliciously healthy! The radicchio adds a gorgeous deep red color and is loaded with healthy vitamins K and B for extra nutritional umph to this stunning salad.
5 cups of baby arugula
10 leaves (partial head) of radicchio (red lettuce)
1lb of Organic chicken breast
1 Bosc pear, cored and diced into 1/2" pieces
2 slices of whole grain bread, toasted (for croutons)
3 Tablespoons of sliced almonds (unsalted)
3 Tablespoons of grated Parmesan cheese
1/2 teaspoon of Mrs. Dash - Garlic & Herb blend
1/4 cup of olive oil
2 Tablespoons of apple cider vinegar
2 Tablespoons of honey
1 teaspoon of whole grain / stone ground mustard
dash of salt & pepper (to taste)
Preparing this recipe:
Preheat oven to 400 degrees and prep chicken breasts on a foil-lined baking sheet, rubbing the chicken with Mrs. Dash on both sides. Roast in oven for 20-25 minutes until the chicken is golden brown reaching 165 degrees with a meat thermometer. While chicken is roasting, in a large bowl tear the radicchio into bite-sized pieces and combine with the arugula. Remove and discard the core of the pear and slice pear into 1/2" pieces. Grate cheese over top of the salad. Toast bread then slice into crouton-sized bites. Toss almonds and croutons on top of the salad. In a liquid measuring cup combine olive oil, apple cider vinegar, honey, mustard, salt and pepper (to taste) and whisk thoroughly until combined.
Remove chicken from the oven and tent in the foil for 2-3 minutes, then slice / cut into bite-sized chunks. Place the warm chicken on top of the salad, then pour the dressing over top and toss thoroughly to combine and fully dress the salad.
Serve on your favorite salad or dinner plate and enjoy!
